Lemon Burrata Risotto

Ingredients

2 tablespoons of butter

2 medium onions, chopped

2 cloves of garlic

1 ½ cups of Arborio rice

Salt

4 cups of vegetable or chicken broth

3 tablespoons of lemon juice

2 teaspoons of lemon zest

 

Spinach and Basil Pesto

1 cup of spinach leaves

½ cup of basil

¼ cup of parsley

2 tablespoons of parmesan cheese

¼ cup of olive oil

 

250g of burrata cheese

 

How to prepare

Cook onions and garlic with butter wait until they become golden brown. Add rice with the salt for two minutes.

Add broth on two stages, while stirring continuously, wait until the water evaporates for about 15 minutes.

Add lemon juice and the lemon zest, then remove the rice from heat.

Mix the pesto ingredients in an electric blender to get a smooth mixture.

Add pesto to the rice, then transfer to a serving dish topped with burrata cheese and parmesan.
