Avocado Lime Cheesecake

300g of cream cheese
200ml of whipped cream to mix with avocado
150ml of whipped cream
1 chopped avocado
The Juice of 2 lemons
1 cup of white sugar
2 ½ teaspoons of gelatin powder
1 cup of biscuit crumbs
100g of butter, melted
How to prepare
Zest the lemons before squeezing them for the juice, then set aside.
Add butter to biscuit and mix them well.
Place the mixture in a mold and press it well at the bottom.
Put it in the refrigerator for 10 minutes.
Mix 150g of whipped cream with gelatin powder in a pan. Bring the mixture to boil and stir well until the gelatin is completely dissolved. Drain and set aside.
In an electric blender, mix avocado, cream cheese, sugar, 200ml of whipped cream, lemon juice and lemon zest. Add gelatin mixture to it and mix well.
Pour the avocado mixture into the tray on top of the biscuit layers then place it in the refrigerator for two hours.
Garnish with lemon zest and serve cold.
