Fish Kabsa

Ingredients
1 kg of fish filet
2 tablespoons of vegetable oil
1 medium onion
1 teaspoon of garlic
1 teaspoon of cumin
1 teaspoon of turmeric
1 teaspoon of ginger
½ teaspoon saffron
1 teaspoon of fish spices
Salt and pepper to taste
2 tomatoes
2 cups of basmati rice
3 cups of water
1 cube of vegetable broth
2 tablespoons of tomato paste
¼ cup chopped coriander
¼ cup roasted almonds
How to prepare
Cook onions with oil, garlic and other spices in a pan over the heat until it becomes light brown.
Add the fish and stir until tender. Remove from heat and set aside.
Add chopped tomatoes and stir over low heat for 5 minutes.
Add rice with water, vegetable broth and tomato paste. Leave the mixture on low heat until the water has completely evaporated.
Transfer the Kabsa to a serving plate and top it with fish.
Decorate with chopped coriander and toasted almonds.
