Mussels with tomato sauce

2 kg of cleaned mussles

3 garlic cloves

2 small bouquets of parsley

2 small bouquets of coriander

1 tablespoon of cumin

1 tablespoon of paprika

1 tablespoon of white vinegar

1 tablespoon of tomato paste

1 cup of tomato sauce

Black pepper

How to prepare

In a pot over heat, cook the mussels with chopped garlic. Add a bit of water and pepper, then let the mussels simmer until they open.

Set mussels aside for 2 minutes and then drain them on top of a dish to preserve its liquid. After the mussels have cooled down a little, remove only one shell from each piece.

In a pan over the heat, mix parsley with coriander, spices, tomato paste and mussels water. When boiling, add the mussels, then tomato sauce, and stir the mixture for 30 seconds.

Finally, add black pepper and serve the mussels.
