Spanish Seafood Paella

Ingredients
4 and a half cups of chicken broth
1/2 teaspoon of saffron
Salt, to taste
3 tablespoons of olive oil
1 chopped onion
1/2 red pepper, minced
3 crushed garlic cloves
3 cups of rice (Spanish or Italian)
2 tomatoes, cut into cubes
1 cup frozen peas
500g of cleaned shrimp
500 gm cleaned oysters
500gm cleaned calamari
Chopped parsley for garnish
How to prepare
In a pot on the fire, put the broth until boiling. Add the saffron with salt and then put it out of the fire for at least 15 minutes.
In another pot on the stove, cook the onions in the oil, then add the pepper and garlic. Add the rice with constant stirring for 5 minutes.
Add stock, tomatoes and peas. Cover the pot and leave it on the fire without moving for 15 minutes or until the rice absorbs most of the stock.
Add the seafood to the rice, then cover the bowl and put on the fire for 10 minutes or until the rice is browned at the bottom of the bowl.
Garnish the dish with parsley and serve.
