Cozy Autumn Wild Rice Soup

Ingredients
1 tablespoon of oil
1 onion, chopped
2 cloves garlic, mashed
6 cups of vegetable broth
1 cup of wild rice
500gm chopped mushrooms
2 carrots, chopped
1 potato, chopped
Seasoning and salt to taste
1 cup unsweetened coconut milk or cream
How to prepare
Fry the onions in the oil until they turn brown. Add garlic, then stock, rice, mushrooms, carrots, potatoes, salt and pepper.
Bring the mixture to a boil. Reduce heat, cover and cook again for 30 minutes, until rice is cooked, stirring occasionally.
Add the unsweetened coconut milk or cream and stir over the heat for 5 minutes. Serve the soup hot.
