Indian Potato and Turmeric Salad

1 kilogram of potatoes, cut into small cubes

1 tablespoon of coconut oil

1/2 teaspoon of turmeric

1 tablespoon of paprika

1 tablespoon of grated ginger

1/3 cup of coconut milk

Salt and pepper to taste

3 chopped green onions

Lemon juice

1 cup of peas


How to prepare

Put the potatoes in the water on the fire until soft a little. Strain and set aside. Cook the peas in the same boiled water.

To prepare the sauce, put the oil in a heated pan, add the turmeric, paprika and ginger and mix for 30 seconds. After the mixture has cooled down a bit, add the coconut milk.

In a large bowl, put the potatoes with the peas and the sauce, then add the green onions, lemon juice, salt and pepper and stir well.

Serve cold.
