Orange Chocolate Mousse

Ingredients
½ cup of thick cream
3 medium eggs (yolk)
¼ cup of filtered orange juice
¼ cup of sugar
¾ cup of sliced black chocolate
2 medium eggs (egg whites)
2 tablespoons of sugar
How to prepare
Whisk cream well until it thickens. Cover with plastic wrap and place it in the refrigerator.
In a heat-resistant bowl, whisk the egg yolks with orange juice and sugar then place on top of another bowl filled with boiling water (Bain-Marie method). Continue whisking until the mixture doubles in size.
Add chocolate and stir until it melts.
Place the mixture aside to cool down to room temperature while stirring it from time to time.
In another bowl, beat the egg whites until foaming. Add 2 tablespoons of sugar and continue whisking until the mixture thickens.
Add egg whites to the chocolate mixture with cream in two rows and mix well.
Pour the chocolate mousse into glass cups.
Cover the cups with plastic wrap and place them in the refrigerator.
Decorate the mousse with whipped cream, orange slices and chocolate before serving.
