Lemon Risotto

Ingredients

1 tablespoon of butter

1 onion, finely chopped

2 cups of Arborio rice

Salt and pepper to taste

5 cups of vegetable or chicken broth

¼ cup of lemon juice

300 g shredded smoked Scamorza cheese

Shredded parmesan and lemon zest to serve

 

How to prepare

In a pan over the heat, cook onions with butter and wait until they become light brown. Add rice with salt and pepper then cook for two minutes.

Add the broth and stir with a wooden spoon, wait until the liquid is evaporated, the rice is cooked and the sauce is thick.

Remove the mixture from heat and add lemon juice with smoked Scamorza cheese.

Serve hot risotto with shredded parmesan cheese and lemon zest.
