Spinach Curry Lasagna
500 g raw yellow lasagna
1 kilo of fresh cut spinach leaves
1 Tablespoon of oil
1 onion, chopped medium size
1 teaspoon of curry
Salt and pepper
2 cups of fresh cream
2 cups of milk
1 cup of sliced black olives
1 ½ cup of grated Parmesan cheese
How to Prepare
Cook the onions with oil over heat, until they turn blond. Add spinach with salt, spice and curry and stir well.
In an oven tray, lay a layer of lasagna slices and cover it with the third of the amount of spinach mixture.
Add olives and a little bit of Parmesan cheese, then cream and milk.
Repeat the same order three times, make sure the lasagna is the last layer at the top.
Add the rest of the cream and milk, and spread a cup of parmesan cheese on top, then place the tray in a pre-heated oven for 30 minutes, until the cheese becomes red.
Serve the Lasagna hot.
