Cake with apple and olive oil

Ingredients

1 and a quarter cup of sugar

4 large eggs

2 egg yolks

Pinch of salt

1 tablespoon of shredded orange

1 teaspoon of cardamom

2 teaspoons of vanilla

1 cup of olive oil

2 cups and 1/3 of flour

1 tablespoon of baking powder

2 large green apples, peeled and sliced

2 tablespoons of fine sugar

 

How to prepare

In a large bowl, beat the sugar, eggs, yolk and salt for 2 minutes. Add the shredded orange, cardamom and vanilla, then gradually add the olive oil until the mixture is homogeneous.

Add flour and baking powder, beat well, add apples and mix. Pour the mixture into a greased cake and place in a preheated oven for about an hour. Leave to cool for about 30 minutes before turning it into a serving tray.

Sprinkle with fine sugar and serve with whipped cream.
