Eggplant stuffed with quinoa

Ingredients
4 eggplant, cut in half
3 tablespoons of olive oil
1 tablespoon of olive oil
1 cup of walnuts, coarsely chopped
2 cups mushrooms, roughly chopped
1 clove of garlic
1/2 tablespoon of tomato paste
1/2 cup cooked quinoa
Salt and pepper to taste
How to prepare
Brush the eggplant with olive oil and place it in the preheated oven for 30 minutes or until it becomes soft.
In an electric mixer, add the walnuts and mushrooms and mix until the mixture becomes sand.
Cook the mushroom and walnut mixture in the oil in a pot over a stove for a few minutes, then add the garlic and tomato paste and stir well.
Add quinoa, salt and pepper and mix well.
Eggplant is placed in a serving dish. Pour the mushroom and walnut mixture over it. Serve with yogurt and pomegranate.
