Meat-Stuffed Artichokes with Rice

Ingredients

500 g frozen artichoke 

2 tablespoons of oil

1 onion chopped medium size

3 tablespoons of pine nuts

250 g ground meat

1 glass of water

4 tablespoons of tomato paste

1/2 of lemon juice

Salt and pepper 

 

How to prepare

Boil the artichokes, drain and set aside.

In a bowl over the heat, cook onions with oil until they turn blond. Add pine and ground meat with salt and spice. Stir the mixture until tender.

Place artichokes in a tray and stuff with meat.

Dissolve tomato paste in water and add lemon juice. Pour the mixture over artichoke.

Place the tray in a pre-heated oven, wait until the sauce thickens.

Serve hot with rice vermicelli.
