Tunisian Shakshuka

Ingredients

2   tablespoons of olive oil

1   onion, chopped

1 red pepper, chopped

1 green pepper, chopped

2   crushed garlic cloves

3   tomatoes cut into small cubes

1   teaspoon cumin

Salt and pepper to taste

4   eggs

 

How to prepare

Cook the onions with the oil in a pot on the fire until they soften, then add the pepper and garlic and leave the mixture on the fire for 5 minutes.

Add tomatoes, cumin, salt and pepper. Leave the mixture on a low heat until it thickens.

Make four holes in the mixture and then put an egg in each one.

Cover the pot and simmer for about 5 minutes or until the eggs are cooked.

Serve immediately with bread.
