Coconut Curry Salmon

Salt and pepper to taste

1 tablespoon of vegetable oil

1 shallot, thinly sliced

1 tablespoon of red curry paste

2 cloves garlic mashed

2 teaspoons chopped fresh ginger

One can of coconut milk

1 tablespoon of Sriracha sauce

1 tablespoon of fish sauce



Season salmon with salt and pepper.

In a pot on the stove, put the salmon in the oil until it turns brown on both sides. Remove salmon and set aside.

In the same pot, cook shallots until golden, then add red curry paste, garlic and ginger. Leave on fire for one minute.

Reduce heat and add coconut milk, sriracha sauce and fish sauce until boiling.

Put the salmon back in the bowl for 15 minutes, covering the fish with the sauce from time to time.

Serve hot with rice or pasta.
