Mediterranean eggplant with yogurt sauce recipe

Ingredients

4 long, thin eggplant

4 tablespoons of olive oil

4 cloves of garlic

Salt and pepper to taste

2 tablespoons of sumac

 

Yogurt sauce

1/4 cup of tahini

1/4 cup of yogurt

2 cloves of garlic

2 tablespoons of lemon juice

1/4 teaspoon salt

1/2 teaspoon sumac

1 tablespoon of olive oil

 

How to prepare

Cut the eggplant into long slices and place on a baking sheet in a tray. Brush with olive oil and rub with crushed garlic. Add salt and sumac, then place it in the preheated oven for 30 minutes until it becomes tender.

At this time, make the yogurt sauce by mixing the ingredients well in a bowl.

Put the eggplant in a serving dish and pour the sauce over it, then decorate with pomegranate and walnuts before serving.
