Beetroot Salad with Feta and Pistachios

Ingredients
1 cup cooked beetroot, cut into cubes
1/4 cup chopped red onion
1 garlic clove, mashed
4 tablespoons of olive oil
2 tablespoons of apple cider vinegar
4 tablespoons of orange juice
1/2 cup of dried cranberries
Salt and pepper to taste
1 cup chopped coriander
1/2 cup of pistachios
1 cup feta cheese, cut into cubes
Directions
In a large salad bowl, combine beetroot, onion, garlic, olive oil, vinegar, orange juice, cranberries, salt, and pepper.
Add pistachios and feta cheese. Gently mix the mixture.
Serve the salad garnished with chopped coriander.
